Casablanca Supper Club is a new Spanish–Cuban concept opening inside the Mangos Tropical Cafe
venue on International Drive, operated by the Baires Grill group — the same team behind
Corazón by Baires and Cali here in Orlando, and Baires Grill in New York, Doral and Coral Gables.
The reference point is golden-era Havana: gold, palms, framed film stills at the entrance, servers in white
jackets and bow ties, a stage sitting directly in the diners’ sightline rather than off to one side. What it is
deliberately not is a period reproduction. The 1940s film gives the concept a name and a mood; the food is
a Spanish–Cuban fusion built for South Florida palates — heavy on seafood, reinterpreted through Cuban
technique — and the typography, the palette and the tone all pull modern rather than referential.
The economic idea underneath it is the interesting one. Everything about the room is staged to read high-end.
The pricing is not. On International Drive that combination is a strategic position, not a compromise: guests
arrive in shorts and flip-flops from a theme park and sit down in a room that feels like an occasion.

entertainment is a multiplier, not the product. In Diego’s words, guests should come because the food is
outstanding and the service is right — and there happens to be someone singing at the piano. That

proposal we write usually opens with what we found wrong. This one opens with what does not exist yet, which is a

The Core Thesis
A restaurant only opens once. The difference between a concept that fills the room in
month one and one that spends its first two quarters explaining itself is almost never the food — it is
whether the brand, the listing, the library and the audience were built before the doors opened,
or after. Casablanca still has time to do it in the right order.

The Market
Market Opportunity
International Drive is one of the most concentrated restaurant corridors in the United States, and it behaves
differently from a neighbourhood market. Demand is not built over years of local word of mouth — a very large
share of it is decided in the ten minutes between a guest leaving a hotel or a park and choosing where to eat, on a
phone, within a short radius. Discovery runs through Google Maps, “restaurants near me” searches, and
whatever the listing itself looks like when it surfaces.
That has a hard consequence for a launch: a restaurant that is not on the map does not exist.
Not “is at a disadvantage” — does not exist. An unclaimed or thin Google Business Profile on opening
night costs a new concept its highest-intent traffic during the exact weeks when word of mouth has not started yet.
This is why the listing has to be mature before September, not after.
On the competitive side, the team identified the two closest reference points itself: Cuba Libre,
which performs strongly nearby with Cuban food, and Estefan Kitchen. Both prove the demand for
Cuban-forward dining on and around the corridor. Neither of them owns the supper-club position — the room
where dinner, a stage and a nightly program are one experience. Mangos has occupied the dinner-show end of that
spectrum for years; Casablanca is deliberately not a dinner show. The space between those two poles is open, and it
is the most defensible piece of ground on the corridor.
The second audience is local, and it is the one that turns a tourist concept into a business. Orlando residents
who want a room that feels like an occasion without a Corazón check are underserved. They are also the audience
that fills Wednesdays and Thursdays — which is exactly where a five-night operation makes or loses its margin.
Where Casablanca Wins
Cuba Libre owns Cuban food. Mangos owns the dinner show. Nobody on
International Drive owns “an elegant room, a live stage, and a bill that doesn’t scare
you.” That gap is the whole positioning — and it is available because the concept is new
enough to claim it before anyone else names it.

There is no audit to draw from here, so these signals come from the concept itself, the venue, the corridor and the onboarding call on July 23. Each one is an observable fact about where Casablanca stands today and what it makes possible in the nine weeks before opening.
Zero Digital Footprint
Observation. As of July 2026 there is no website, Instagram, Facebook, Google Business Profile, domain or business email for the concept. Nothing has been built and nothing needs to be undone.
Opportunity. Every asset gets built once, to a single set of brand guidelines, with tracking installed before the first dollar of media is spent. No rebrand debt, no legacy cleanup, no inherited bad data.
Naming & Trademark Constraint
Observation. Counsel advised that “Casablanca Supper Club” cannot be registered standalone; “Casablanca at Mangos” is the viable filing. The team simultaneously wants clear separation from Mangos and visible Baires lineage.
Opportunity. Split the architecture: the legal name lives on the filing, the logo stays clean, “inside Mangos” is carried as a location line on the website and Google listing, and the Baires connection runs through bios, sister-concept links and tagging — never inside the mark.
Untapped Sister-Concept Audience
Observation. Corazón, Cali and Baires Grill already hold engaged audiences in Orlando and South Florida. Casablanca launches into that ecosystem with none of it currently pointed at it.
Opportunity. Seed the launch from owned audiences before paying for cold reach — cross-posting, story takeovers, sister-concept links in bios, and a shared path into the reservation flow. The cheapest audience a new concept will ever buy is one the group already owns.
Entertainment Programming Not Communicated
Observation. The venue already runs a fixed nightly show schedule. The team confirmed it is not currently used as a communication asset — it exists operationally, not publicly.
Opportunity. Publish the weekly line-up as a recurring content and booking engine. A named act on a Thursday is a reason to reserve; a rotating calendar is a reason to return. It also fills the two nights that decide the margin on a five-night operation.
High-Intent Search With No Listing
Observation. Searches like “Cuban restaurant International Drive” and “supper club Orlando” run every day on the corridor. Cuba Libre and Estefan Kitchen currently absorb that intent.
Opportunity. Google Business Profile claimed, categorized, photographed, populated with hours, menu links, Q&A and LocalBusiness schema before opening night — so the listing is already credible the first time someone searches for it.
A Concept Built for Content
Observation. Gold, palms, low light, white jackets and bow ties, a lit stage in the sightline, framed film stills at the entrance, plated seafood. Visually this is a strong concept before a single photo is taken.
Opportunity. Production days scheduled before opening to build a 90-day library — so launch week is spent distributing content, not producing it. The room is the campaign.
Reservation & Systems Path Still Open
Observation. Toast is already in the venue and reservations for the group run through OpenTable, but the final structure depends on the alcohol licence and entity questions still with counsel. What we could not confirm is which systems Casablanca will operate under its own name.
Opportunity. Build the website and listing so the reservation path can be wired to whichever platform the licence structure lands on, without rebuilding. We map what is already running first, then connect the missing pieces — rather than assuming a stack that legal has not approved yet.

For Casablanca the framing is slightly different from a normal engagement. In the first two months this is not

yet. Brand identity and guidelines from scratch. A custom website. Every channel created, verified and

The first two months are billed at $3,000/month because they are the build: brand, website,
channels, listing, tracking and library. From month three, once the room is open and the demand engine is running
at full weight, the program moves to the standard $4,500/month single-location rate.
Worth stating plainly for the partner conversation: the full brand identity, the brand guidelines and the
custom website are all included in the retainer — work that is normally invoiced as a separate
five-figure project before any marketing begins. There is no separate identity fee and no separate web build fee.
Media spend is separate from the retainer and never marked up. You pay the platforms directly and
we manage every dollar against tracked outcomes. Our recommendation for Casablanca:
$1,500–$2,000/month across the two pre-opening months (awareness, waitlist build, creator
seeding), stepping up to $3,000–$4,000/month for the opening quarter, then settling toward
roughly 1% of net monthly sales as revenue establishes. That puts the total monthly figure to

La idea económica que hay debajo es la interesante. Todo en la sala está montado para leerse como alta gama. El precio no. En International Drive esa combinación es una posición estratégica, no un compromiso: el comensal llega en bermudas y ojotas desde un parque temático y se sienta en una sala que se siente una ocasión.

La Tesis Central
Un restaurante abre una sola vez. La diferencia entre un concepto que llena la sala en el primer mes y uno que se pasa dos trimestres explicándose casi nunca es la comida — es si la marca, la ficha, la biblioteca de contenido y la audiencia se construyeron antes de abrir las puertas, o después. Casablanca todavía está a tiempo de hacerlo en el orden correcto.

El Mercado
Oportunidad de Mercado
International Drive es uno de los corredores gastronómicos más concentrados de Estados Unidos, y funciona distinto a un mercado de barrio. La demanda no se construye a lo largo de años de boca a boca local — una porción muy grande se decide en los diez minutos entre que alguien sale de un hotel o un parque y elige dónde comer, desde el celular, dentro de un radio corto. El descubrimiento pasa por Google Maps, por búsquedas de «restaurants near me», y por cómo se ve la ficha cuando aparece.
Eso tiene una consecuencia dura para un lanzamiento: un restaurante que no está en el mapa no existe. No «está en desventaja» — no existe. Una ficha de Google sin reclamar o vacía la noche de apertura le cuesta a un concepto nuevo su tráfico de mayor intención justo en las semanas en que el boca a boca todavía no arrancó. Por eso la ficha tiene que estar madura antes de septiembre, no después.
Del lado competitivo, el equipo identificó solo las dos referencias más cercanas: Cuba Libre, que funciona muy bien cerca con comida cubana, y Estefan Kitchen. Ambos prueban que hay demanda de cocina cubana en el corredor y alrededores. Ninguno de los dos ocupa la posición de supper club — la sala donde la cena, el escenario y una programación nocturna son una sola experiencia. Mangos viene ocupando el extremo de la cena-show desde hace años; Casablanca deliberadamente no es una cena-show. El espacio entre esos dos polos está libre, y es el terreno más defendible del corredor.
La segunda audiencia es local, y es la que convierte un concepto turístico en un negocio. Los residentes de Orlando que quieren una sala que se sienta una ocasión sin una cuenta de Corazón están desatendidos. Son además la audiencia que llena miércoles y jueves — que es exactamente donde una operación de cinco noches gana o pierde margen.
Dónde Gana Casablanca
Cuba Libre es dueño de la comida cubana. Mangos es dueño de la cena-show. Nadie en International Drive es dueño de «una sala elegante, un escenario en vivo, y una cuenta que no asusta». Ese hueco es todo el posicionamiento — y está disponible porque el concepto es lo bastante nuevo como para reclamarlo antes de que alguien le ponga nombre.

Los Vacíos
Señales de Crecimiento
Acá no hay auditoría de la cual partir, así que estas señales salen del concepto mismo, del venue, del corredor y de la reunión de onboarding del 23 de julio. Cada una es un hecho observable sobre dónde está Casablanca hoy y qué habilita en las nueve semanas previas a la apertura.
Huella Digital en Cero
Observación. A julio de 2026 no existe web, Instagram, Facebook, ficha de Google, dominio ni correo corporativo para el concepto. No se construyó nada y no hay nada que deshacer.
Oportunidad. Cada activo se construye una sola vez, contra un único set de guías de marca, con la medición instalada antes del primer dólar de pauta. Sin deuda de rebranding, sin limpieza de legado, sin datos heredados malos.
Restricción de Marca y Registro
Observación. El abogado advirtió que «Casablanca Supper Club» no se puede registrar por sí solo; «Casablanca at Mangos» es la vía viable. El equipo quiere al mismo tiempo separación clara de Mangos y linaje Baires visible.
Oportunidad. Separar la arquitectura: el nombre legal vive en el registro, el logo queda limpio, «dentro de Mangos» se resuelve como línea de ubicación en la web y en la ficha de Google, y la conexión con Baires corre por bios, links a conceptos hermanos y tagging — nunca dentro de la marca.
Audiencia Hermana sin Explotar
Observación. Corazón, Cali y Baires Grill ya tienen audiencias activas en Orlando y el sur de Florida. Casablanca se lanza dentro de ese ecosistema sin que nada de eso hoy apunte hacia él.
Oportunidad. Sembrar el lanzamiento desde audiencias propias antes de pagar por alcance frío — cross-posting, takeovers de stories, links a conceptos hermanos en las bios, y un camino compartido hacia la reserva. La audiencia más barata que un concepto nuevo va a comprar es la que el grupo ya tiene.
La Programación no se Comunica
Observación. El venue ya tiene un cronograma fijo de shows por noche. El equipo confirmó que hoy no se usa como activo de comunicación — existe operativamente, no públicamente.
Oportunidad. Publicar la grilla semanal como motor recurrente de contenido y de reservas. Un artista con nombre un jueves es una razón para reservar; un calendario rotativo es una razón para volver. Además ataca las dos noches que definen el margen de una operación de cinco noches.
Búsquedas de Alta Intención sin Ficha
Observación. Búsquedas como «Cuban restaurant International Drive» y «supper club Orlando» corren todos los días en el corredor. Hoy esa intención la absorben Cuba Libre y Estefan Kitchen.
Oportunidad. Ficha de Google reclamada, categorizada, fotografiada y cargada con horarios, links al menú, preguntas y respuestas y marcado LocalBusiness antes de la noche de apertura — para que el listing ya sea creíble la primera vez que alguien lo busque.
Un Concepto Hecho para Contenido
Observación. Dorado, palmeras, luz baja, chaquetas blancas y moños, un escenario iluminado de frente, cuadros de la película en la entrada, mariscos emplatados. Visualmente esto ya es un concepto fuerte antes de sacar una sola foto.
Oportunidad. Jornadas de producción agendadas antes de abrir para construir una biblioteca de 90 días — para que la semana de apertura se dedique a distribuir contenido, no a producirlo. La sala es la campaña.
Reservas y Sistemas todavía Abiertos
Observación. Toast ya está en el venue y las reservas del grupo corren por OpenTable, pero la estructura final depende de la licencia de alcohol y de las cuestiones societarias que siguen con el abogado. Lo que no pudimos confirmar es bajo qué sistemas va a operar Casablanca con nombre propio.
Oportunidad. Construir la web y la ficha para que el camino de reserva se pueda conectar a la plataforma que finalmente habilite la estructura de licencias, sin rehacer nada. Primero mapeamos lo que ya corre, después conectamos lo que falta — en lugar de asumir un stack que lo legal todavía no aprobó.

Para Casablanca el encuadre es un poco distinto al de un cliente normal. En los primeros dos meses esto no es marketing — es construir la infraestructura comercial de un negocio que todavía no la tiene. Identidad de marca y guías desde cero. Una web custom. Cada canal creado, verificado y conectado. Ficha de Google reclamada y madurada. Medición instalada antes de que corra la primera campaña. Una biblioteca de contenido filmada antes de que haya comensales alrededor de los cuales filmar. Una lista de espera abierta antes de que haya sala que sentar.
Desde la noche de apertura en adelante se convierte en el motor de demanda: pauta en Meta y Google, activación de influencers, el calendario semanal de espectáculos como contenido recurrente, captura de reseñas desde la primera mesa, email y SMS contra la lista construida en la pre-apertura, y reporte mensual que le muestra a los socios de Mangos exactamente qué produjo cada dólar.
Dos cosas vale nombrarlas explícitamente, porque en otros lados son proyectos facturados aparte y son la razón por la que este programa encaja en un lanzamiento: la identidad de marca completa con sus guías, y la web custom, están ambas incluidas en el fee. Sin proyecto de branding aparte, sin factura de desarrollo web aparte.

El alcance no cambia entre las dos etapas — cambia la tarifa.
Los primeros dos meses se facturan a $3.000/mes porque son la construcción: marca, web, canales, ficha, medición y biblioteca. Desde el tercer mes, ya con la sala abierta y el motor de demanda corriendo a peso completo, el programa pasa a la tarifa estándar de $4.500/mes para una ubicación.
Vale decirlo con todas las letras para la conversación con los socios: la identidad de marca completa, las guías y la web custom están todas incluidas en el fee — trabajo que normalmente se factura como un proyecto aparte de cinco cifras antes de que arranque cualquier acción de marketing. No hay costo de identidad aparte ni costo de desarrollo web aparte.
La pauta va separada del fee y nunca la marcamos. Ustedes le pagan directo a las plataformas y nosotros gestionamos cada dólar contra resultados medidos. Nuestra recomendación para Casablanca: $1.500–$2.000/mes durante los dos meses de pre-apertura (awareness, construcción de lista, siembra con creadores), subiendo a $3.000–$4.000/mes durante el trimestre de apertura, y después estabilizando en torno al 1% de la venta neta mensual a medida que la facturación se consolide.
