Al Dente no es una pizzería americana más. Son recetas de familia traídas de Maracaibo — mucho queso, salsa propia, un perfil que no se parece al de la competencia local. Ese detalle importa más de lo que parece: en un mercado donde casi toda la pizza sabe igual, ustedes tienen un producto que ya es distinto sin tener que inventar nada.
La historia lo respalda. Arrancaron en 2019 en el food court de Plaza de las Américas, cerraron por los horarios del mall, y en 2022 abrieron el restaurante de Duluth — servicio de mesa, en Breckinridge Blvd, sobre el corredor de Pleasant Hill. En febrero de 2026 abrió Hoschton, con un diseño más ambicioso y una inversión de construcción mayor. Siete años de operación, dos locales propios y una comunidad de 12,000 seguidores en Instagram construida sin haber corrido nunca una estrategia digital real.
Eso es lo que hace este caso interesante. No estamos frente a un restaurante que necesita arreglar el producto o la reputación. Estamos frente a uno que llegó a $69,000 al mes casi sin infraestructura de marketing — y que hoy está en $42,000 porque los canales que lo sostenían nunca se construyeron de verdad.

Este análisis no parte de una auditoría formal. Parte de la conversación del 19 de agosto con ustedes, y de una revisión directa del sitio, el Instagram y los canales de pedido de Al Dente. Los números de ventas son los que ustedes mismos pusieron sobre la mesa.
La situación es clara: el piso cómodo de rentabilidad está en $59,000–$60,000 al mes — el número que ustedes mismos pusieron. Hoy están en $42,000. La brecha es de $18,000 mensuales, y la renta de Hoschton (casi $6,000/mes) hace que cada mes por debajo del umbral apriete más. Lo que no cierra es el diagnóstico habitual: esto no es un problema de producto, ni de reputación, ni de audiencia.
Es un problema de canales sin abrir y de canales mal gestionados. Encontramos cuatro cosas concretas:
Uno — el delivery nunca se promocionó. Hoschton mueve volumen a través de la integración de Toast con DoorDash, pero eso es despacho de conductor, no exposición de marketplace. En ocho años no se ha corrido una sola promoción de delivery. Es un canal entero sin abrir, y es el que más rápido mueve la aguja.
Dos — el sitio web no es de ustedes. El pie de página de aldentepizzarestaurant.com todavía dice "Made by Bossy Digital Marketing" — la agencia que dejaron hace cinco meses. Además, el sitio no tiene página de menú: sólo "Order Online" y "Locations". La inconsistencia entre el menú impreso y el digital que mencionaron en la llamada empieza exactamente ahí.
Tres — dos locales, una sola estrategia. El anuncio de Hoschton apareciéndole a gente de Duluth, a 40 minutos, no fue mala suerte: es lo que pasa cuando dos mercados con públicos opuestos comparten una misma arquitectura de campaña.
Cuatro — Toast está dormido. El POS ya tiene email, SMS y reservas disponibles, y no se están usando. Es una base de clientes acumulada durante siete años que hoy no genera nada.

Hoschton es el corredor de Braselton: crecimiento suburbano nuevo, un público 98% americano y de mayor edad, con más disposición a pagar por conveniencia — y con volumen de delivery ya comprobado.
Esa diferencia no es un detalle demográfico. Es la razón por la que una sola campaña no puede servir a los dos. El mensaje que activa a una familia latina en Pleasant Hill no es el mismo que activa a una pareja de sesenta y pico en Braselton un martes por la noche. Hoy ambos comparten creativos, presupuesto y segmentación — y por eso el dinero se fuga.
Hay algo más, y es de tiempo. Hoschton abrió en febrero de 2026. Todavía está en su primer año, que es la ventana más barata que existe para instalar una marca en un mercado nuevo. Cada mes que pasa sin presencia local construida, ese espacio lo ocupa otro.

Con casi $6,000 de renta en Hoschton, cada mes por debajo del umbral compone la presión. Y el delivery — el canal que puede moverse más rápido — es también el único que puede empezar a producir antes de que termine el primer trimestre. Es la palanca correcta en el momento correcto.

Al Dente isn't another American pizzeria. These are family recipes brought from Maracaibo — heavy on cheese, built on a house sauce, with a profile that doesn't resemble the local competition. That detail matters more than it sounds: in a market where nearly all pizza tastes the same, you already have a product that's different without having to invent anything.
The history backs it up. You started in 2019 in the Plaza de las Américas food court, closed because of the mall's hours, and in 2022 opened the Duluth restaurant — full table service on Breckinridge Blvd, along the Pleasant Hill corridor. Hoschton opened in February 2026, with a more ambitious design and a larger build investment. Seven years of operation, two owned locations, and a community of 12,000 Instagram followers built without ever running a real digital strategy.
That's what makes this case interesting. This isn't a restaurant that needs to fix its product or its reputation. It's one that reached $69,000 a month with almost no marketing infrastructure — and that sits at $42,000 today because the channels holding it up were never truly built.

This analysis doesn't start from a formal audit. It starts from the August 19 conversation with you, and from a direct review of Al Dente's website, Instagram and ordering channels. The sales figures are the ones you put on the table yourselves.
The situation is clear: the comfortable profitability floor sits at $59,000–$60,000 a month — the number you put on the table yourselves. Today you're at $42,000. The gap is $18,000 monthly, and the Hoschton rent (nearly $6,000/month) means every month below the threshold squeezes harder. What doesn't fit is the usual diagnosis: this isn't a product problem, a reputation problem, or an audience problem.
It's a problem of unopened channels and mismanaged ones. We found four concrete things:
One — delivery has never been promoted. Hoschton moves volume through the Toast–DoorDash integration, but that's driver dispatch, not marketplace exposure. In eight years, not a single delivery promotion has run. That's an entire channel sitting unopened, and it's the one that moves the needle fastest.
Two — the website isn't yours. The footer on aldentepizzarestaurant.com still reads "Made by Bossy Digital Marketing" — the agency you left five months ago. The site also has no menu page at all: navigation is only "Order Online" and "Locations." The mismatch between the printed and digital menu you raised on the call starts exactly there.
Three — two restaurants, one strategy. The Hoschton ad showing up for people in Duluth, 40 minutes away, wasn't bad luck: it's what happens when two markets with opposite audiences share a single campaign architecture.
Four — Toast is dormant. The POS already has email, SMS and reservations available, and none of it is being used. That's seven years of accumulated guest data producing nothing today.

Duluth and Hoschton are 40 minutes and a world apart. Duluth is Gwinnett: high density, intense competition, a 95% Latino audience along the Pleasant Hill corridor, and a consumption pattern that today is mostly phone pickup and direct online ordering. Hoschton is the Braselton corridor: new suburban growth, a 98% American and older audience with more willingness to pay for convenience — and delivery volume already proven.
That difference isn't a demographic footnote. It's the reason one campaign can't serve both. The message that activates a Latino family on Pleasant Hill is not the message that activates a couple in their sixties in Braselton on a Tuesday night. Today both share creative, budget and targeting — and that's where the money leaks.
There's a timing factor too. Hoschton opened in February 2026. It's still in its first year, which is the cheapest window that exists for planting a brand in a new market. Every month that passes without local presence built, someone else takes that space.

Two separate campaign structures, one per location, with their own geographic radii so a Hoschton ad never again pays for impressions in Duluth. GA4 / Pixel tracking from day one. Includes brand identity and a brand guidelines book: logo versions, typography, color system and voice — what Johanys identified as the most obvious gap. When Rreal Tacos was a single location, the rule was reinvesting 10% to 15% of sales into marketing, and that's what compounded the growth into today's twelve locations. For Al Dente, $3,000 of program plus $2,000 of ad spend is $5,000 monthly — roughly 12% of current sales, dropping to just over 8% once you reach $60,000. That sits squarely inside the logic that worked for us. And read the other way: for the program to pay for itself, it needs $3,000 of incremental revenue per month — 7% on top of what you sell today.
